Flavor Wheels

The contention of craft chocolate makers in America today is that lovingly produced, unaccompanied, lone-wolf, dark chocolate with its hundreds, thousands, trillions (?) of flavor compounds is a rich and complex enough food to be enjoyed and tasted similar to wine, coffee, and all those other things whose tasting involves shut eyes, deep inhales and poetic language to tease out a scent of something subtle… some notes of… yes… freshly mown grass and… and… ah! horse manure. As such, I present to you some flavor wheels, so that we may all describe in precise terms the wisps at the edge of the Sybaritic rainbow.
